Nicaragua - Finca San Jose de las Nubes - Natural Process
A fuller-bodied light roast, sweet and vibrant, with crisp honeydew melon, kumquat and citrus rounded out by a hint of almond. The natural process gives it noticeably more fruit and weight than its washed sibling.
Finca San José de las Nubes
De las Nubes means "from the clouds." This microlot grows at 1,200 meters in nutrient-rich volcanic soil, shaded by plantain trees, on Bayardo Reyes's farm in Nicaragua — dried in the cherry rather than washed, which is where the melon and citrus character comes from.
Bayardo's priority with this land has always been the people on it. When he bought the farm it had no buildings. Since then he has built housing for the workers, imported solar panels and a wind turbine to bring in electricity, improved the toilets and sanitation, and funded a teacher for farmworkers and their children.
