Nicaragua - Finca San Jose de las Nubes - Washed Process
A clean, layered light roast with cherry, tangy stone fruit and hazelnut, a syrupy sweetness and a crisp acidity, finished with an unmistakable spicy effervescence. Best savored black.
Finca San José de las Nubes
De las Nubes means "from the clouds," and the farm earns the name. This microlot grows at 1,200 meters in nutrient-rich volcanic soil, shaded by plantain trees, on Bayardo Reyes's farm in Nicaragua.
Bayardo's priority with this land has always been the people on it. When he bought the farm it had no buildings. Since then he has put up housing for the workers, imported solar panels and a wind turbine to bring in electricity, improved the toilets and sanitation, and funded a teacher for farmworkers and their children. Try It Beside the Natural
We buy the same beans from Bayardo processed two ways. Tasting the natural process against this washed lot side by side is the clearest illustration of what processing does to a coffee — same farm, same year, two very different cups. The De las Nubes Box Set pairs them.
